Each bite of this whole plant food Banana-Maple Granola offers a delightful crunch, the sweetness of bananas and maple syrup, and the nutty flavors of flaxseed and pumpkin seeds.

Ingredients
  • 2 ripe bananas
  • ½ cup maple syrup
  • ¼ cup water
  • 1 teaspoon vanilla extract
  • Pinch of sea salt (optional)
  • 4 cups rolled oats
  • ¼ cup flaxseed meal
  • ½ cup pumpkin seeds
Directions
  • Step 1 Preheat your oven to 300°F. Line a 13×18 inch baking sheet with parchment paper.
  • Step 2 In a food processor, combine bananas, maple syrup, water, vanilla extract, and sea salt. Purée until smooth and creamy.
  • Step 3 In a large bowl, mix the banana purée with the rolled oats, flaxseed meal, and pumpkin seeds until well combined.
  • Step 4 Spread the mixture evenly onto the prepared baking sheet.
  • Step 5 Bake for 40-45 minutes, or until the granola is golden and crispy.
  • Step 6 Let the granola cool completely, then store it in a sealed container for up to ten days.
