This vegan enchilada sauce proves that embarking on a whole plant food diet doesn’t mean you have to skimp on flavor. This homemade enchilada sauce is a testament to the culinary magic of combining healthful ingredients.
While you’re being thankful that I don’t type 3,000 words per post, let’s look at some of the star ingredients before we get to the recipe:
- Tomato Sauce: A powerhouse of antioxidants like lycopene, it’s excellent for heart health, cognitive function, and skin vitality.
- Cornstarch: A gluten-free option that gives the sauce a delightful thickness. Cornstarch is rich in resistant starch which contributes to a healthy microbiome.
- Chili Powder: Brings heat and metabolism-boosting properties and may lead to a longer life. Choose a salt-free mix to maximize its healthful potential.
- Chipotle Powder: Offers a smoky depth and contains capsaicin, known for its anti-inflammatory effects.
- Onion Powder: Adds a mild, sweet flavor, rich in antioxidants which among other things, contributes to a healthy blood lipid profile.
- Garlic Powder: Known for its immune-boosting qualities and ability to regulate blood pressure.
- Smoked Paprika: Adds a wonderful smokiness and is rich in antioxidants and vitamins. Paprika may be protective against UV-induced skin cell damage.
