A delightfully complex combination of sweet, tangy, and savory notes in a whole plant food package.

Ingredients
  • ½ cup water
  • 1 red bell pepper, chopped
  • 1 bunch green onions, chopped
  • 1 cup frozen corn kernels
  • 1 cup frozen baby lima beans
  • 1 15-ounce can black beans, drained and rinsed
  • 2 cups hot cooked brown rice
  • ½ cup fat-free agave-mustard salad dressing
  • Freshly ground black pepper, to taste
Directions
  • Step 1 In a medium pot, add ½ cup of water along with the chopped red bell pepper, green onions, corn, and baby lima beans.
  • Step 2 Cook the mixture over medium heat, stirring occasionally, for about 10 minutes.
  • Step 3 Once cooked, remove from heat and drain any excess water.
  • Step 4 In a large bowl, combine the cooked vegetables with the drained and rinsed black beans and hot cooked brown rice.
  • Step 5 Add ½ cup of fat-free agave-mustard salad dressing to the rice and vegetable mixture. Toss well to ensure everything is evenly coated.
  • Step 6 Season the dish with freshly ground black pepper according to your taste preference.
  • Step 7 Serve the Fiesta Rice warm or cold, as desired.
